Potato Corn Chowder

A hardy chowder like this will fill that void and bring warmth on a cool day.

Ingredients 

  • 1 Tbsp vegetable oil
  • 2 slices back bacon, sliced
  • 1/2 Cup diced onion
  • 1 cup potatoes, cubed in small pieces
  • 1 1/2 Cup chicken broth
  • 14 oz can creamed corn
  • 1 1/2 Cup frozen kernel corn
  • 1 can evaporated milk
  • cayenne pepper
  • mace


Directions

  1. In deep saucepan, heat oil and brown bacon. Add onion and fry until translucent.

  2. Add potatoes and broth, cover and simmer for 15 minutes.

  3. Add corn and bring to a shimmer for 2 minutes.

  4. Stir in milk and reheat, but do not boil.

  5. Add a few dashes of cayenne pepper and pinch of mace.
