Processing

The Majority of the potatoes grown in the province are for the Processing Industry.


All potatoes grown for processing are grown under contract with quantity and price specified prior to planting. The main industry is Frozen French Fry and Frozen Potato Specialties . There are 3 major Frozen Processing Plants in the province; Lamb Weston-ConAgra, McCain Foods and Cavendish Farms. The main variety for French Fry production is the Russet Burbank with some early varieties such as Shepody and Ranger Russet grown for early off-field delivery.  


The second largest processing industry is the Potato Chip sector. There are 2 Potato Chip processing plants in the province; Pepsico-Frito Lay and Old Dutch all located in southern Alberta.
