Dilly Potato Salad

Ingredients
- 8 large cooked potatoes, chopped (Yukon Gold or Sangre)
- 4 hard boiled eggs, chopped
- 5-6 green onions, diced
- 4 stalks celery, finely chopped
- 1/4 cup vegetable oil
- 1/2 cup sour cream or plain yogurt
- 1 cup mayonnaise or ( miracle whip)
- 1/2 cup chopped sweet pickles
- 1/4 cup pickle juice/liquid
- 1-2 Tbsp dill weed
- 1 tsp curry powder (optional)
- salt and pepper to taste

Directions
- in large bowl, add chopped potatoes and chopped eggs. **Ensure they are cooled before handling.
- Mix together all the liquids in a bowl and gently fold into potato and eggs.
- Add remaining ingredients and stir.
- Cover and chill for at least 2 hours.
Tips & Variations
Leaving the skin on a new potato adds more fiber and color to your salad
Add 2 grated apples ( tossed in lemon juice for color)
