Directions
- Preheat oven to 425°F (220°C).
- Wash and scrub the potatoes, then pat them dry. Use a fork to pierce each potato several times, then rub them all over with olive oil and season generously with kosher salt. - While the potatoes are baking, prepare the topping by combining all of the cottage cheese mixture ingredients in a bowl. Stir until everything is well mixed.
- Once the potatoes are fully baked, slice each one open lengthwise and gently fluff the inside with a fork. Spoon the cottage cheese mixture over the top, using about ½ cup per potato, and serve immediately.
