Table Potatoes

In 2009 2376 acres of potatoes were harvested for the fresh market.
To get 100% Alberta grown fresh table potatoes ask your grocer to stock them or purchase them from a Market Gardener near you! If you cannot find a market gardener give the PGA a call and we will direct you to the grower nearest you. There are several very tasty new varieties that we're sure you will like.

Some popular varieties grown are Ranger Russet, Bintje and the Sangre. Gourmet and specialty varieties are also grown for fresh market sales. To help you choose a table potato the important things to check out will be texture, color, flavour and smell.
  • Russet Burbanks have a dry mealy texture when baked. They will break up when boiled which makes them an excellent choice for mashed potatoes
  • Norland potatoes are soggier and wet when baked, but hold together better when they are boiled.
  • White or yellow-fleshed potatoes will have a creamy colour and should not discolour after cooking; the Norland may darken faster than other varieties.
  • Potatoes when cooked should smell like a “normal” cooked potato. Potatoes that have green colour on the surface should be peeled so remove all the green skins. Small amounts are okay to eat but may add bitterness to the taste of the potato.
  • Pre-peeled potatoes are also available for the food service industry. They are vacuum-sealed and must be refrigerated; they have a limited shelf life.

Table potatoes are marketed through potato packing facilities, where they are washed, graded and delivered to the wholesale and retail customers.
